Who says you have to have turkey for Thanksgiving?

Well, this Thanksgiving was definitely different...first Thanksgiving without some family around and first Thanksgiving without turkey. But it wasn't all that bad and I'd probably do it again. Not the "no family" part, but the different meal was nice. We were planning on going to Brent's in Provo for the holiday, but the roads were all so snowy and icy that we decided it would be much safer to just stay put at home. We talked to all of the family by phone or webcam and then just spent the rest of the day cozy by the fire. Even got in an afternoon walk after our scrumptious dinner. Our menu was as follows:

Herb crusted salmon
Stuffing
Steamed veggies
Cranberry salad
Multi-grain and herb dinner rolls
Pumpkin mousse parfaits
Iced pumpkin spice cookies
Apple Cranberry sparkling cider






And  Bruce did most of the cleanup...in 15 minutes. Can't beat that for a stress-free Thanksgiving.
